This Greek Pasta Recipe is an easy and crowd pleasing dinner recipe, perfect for weeknights or family gatherings.

With young kids who have constantly changing preferences, it is sometimes really challenging to make a home cooked meal that everyone will eat and enjoy. When I came up with this one pot summer pasta I shared a few weeks ago, my whole family cleaned their plates. It was like a glorious light from heaven just shone down on our dinner table and no one complained, no one didn’t like this or that, everyone just ate. They ate it ALL! And asked for seconds. All of them!

I can’t even tell you how nice it was to enjoy dinner! I didn’t even realize how chaotic it normally is until it wasn’t. I needed more pasta dinners. And not the kind form the blue box. Pasta dinners that were delicious and healthy. Somehow if pasta is involved my kids think vegetables are okay. I personally don’t get the logic, but I will however have absolutely no problems exploiting this to its full advantage.

So the next amazing, family pleasing, plate cleaning pasta dinner was born. I think your family will love it just as much as mine- and you will love that it is packed with veggies and super easy to make! The creamy sauce, the colorful veggies, the hearty pasta, the delicious chicken. It is a winner all around.

Start by boiling the pasta per the package directions. During the last 3-5 minutes of cook time add the peas to cook with the pasta. I used penne, but you can use whatever kind your family likes. While it is cooking chop your veggies and chicken. I used bell pepper, yellow pepper, artichokes, tomatoes, green peas, and red onion. I knew my kids wouldn’t be crazy about the red onion so I chopped it in large chunks so it would be easy for them to eat around. The peas, well, those aren’t really so greek, but the colors looked really pretty and the flavors worked super well together too. Adding a little more bulk of veggies makes the whole dish more nutritious and lower calorie, so I will take it!

Next mix up the greek sauce that makes everything meld together and become so-so delicious! Use a blender or food processor to combine the olive oil, red wine vinegar, sugar, garlic, oregano, basil, dill, salt, pepper, and feta until it has all come together into a sauce. Then add the buttermilk little by little, while the blender is running, or blending between each add until it is all combined and emulsified (fancy word for the oil being combined and not separating from the other liquids.)

Once the pasta/peas are done, drain the mixture and return it to the pot. Mix in the veggies, chicken and feta. Then pour the sauce over the whole pot and stir to coat everything well. Easy as that, you are ready to serve!

Ingredients

  • 16 oz Penne Pasta
  • 1/2 Rotisserie Chicken chopped
  • 16 oz Frozen Sweet Green Peas
  • 1 Red Bell Pepper chopped
  • 1 Yellow Bell Pepper Chopped
  • 2 Cups Cherry Tomatoes halved
  • 1 Can Artichoke Hearts drained and chopped
  • 1/2 Red Onion chopped
  • 1 Cup Feta Cheese

For the dressing:

  • 1/2 Cup Olive Oil
  • 2 Tbsp sugar
  • 3 cloves garlic minced
  • 2 tsp dried oregano
  • 1 Tbsp chopped fresh dill
  • 10-12 basil leaves chopped
  • 1 cup feta cheese crumbles
  • 1 cup buttermilk
  • Salt & Pepper to taste

Instructions

  • Boil the pasta per package directions to al dente. Add in the frozen peas for the last 3-5 minutes of cooing time.

  • While the pasta cooks chop the chicken, peppers, tomatoes, artichokes and onion.

  • Make the dressing by using a blender or food processor to blend the olive oil, sugar, garlic, oregano, dill, basil, and feta until creamy and well blended.

  • Add the buttermilk slowly while the blender is running until the sauce is just emulsified.

  • Add salt and pepper to taste.

  • Drain the peas and pasta when done and return to the pot.

  • Mix in the veggies, feta and chicken and then pour the sauce over the top and mix until everything is evenly coated.

  • Serve immediately. Enjoy!
